Salmon Cakes

I wrote this post ages ago and forgot to actually upload it. So... here it is. :)

Basic Ingredients:
  • 1 can salmon
  • 2 slices of bread
  • 1/2 onion
  • 1 egg
  • frozen peas
  • parsley
  • flour
  • lemon juice

Hubby wants more fish in our diet. It's been a long time since I made these but I gave it a try last night.

Basic Instructions: Put one slice of bread into a bowl & splash some milk on top, let it soak. Drain salmon (into a cup or bowl- you will need the juice later) and pick through for bones (this can take awhile). Add salmon to the bowl, add egg, sprinkle in salt & pepper & parsley. Finely dice onion half (a mini food processor is handy for this). Add onion to the bowl and mix everything together. Add more bread as necessary to make the mixture hold together. (I did this all in a food processor, though you don't have to.)
Now you have two options. Last night I put the mixture into muffin tins and baked at 350 for about 40 minutes. If the mixture is thick enough, you can shape them into patties and fry on the stovetop in a bit of oil. Stovetop is tastier, but oven is healthier.

It's good to top this with a white sauce. Melt a tbsp or two of butter in a saucepan, add a tbsp or two of flour. Slowly add the juice you saved from the can, then water or milk. Some salt & pepper and lemon should make it tastier.

This is good served with peas and mashed potatoes.

Cost Breakdown:

Note: This batch was made with a small (8oz) can of salmon - I highly recommend using a larger can - in which case you might need to use more bread. I only needed 1.5 slices for the small can. Also, breadcrumbs are obviously a suitable alternative. The smaller-can version made only 7 cakes, even filling the muffin cups only 3/4. We had just enough for our small family, but no leftovers. :)
